1 pound frozen popcorn chicken

1/2 Cup Chicken Stock

3 Tbsp Light Brown Sugar, packed

2 Tbsp Soy Sauce

2 Tbsp Hoisin Sauce

1 1/2 Tbsp Rice Wine Vinegar

2 tsp Corn starch

1/2 tsp sesame oil

1 Tbsp Olive oil

2 cloves garlic, minced
-
2 tsp minced fresh ginger
-
1/2 tsp chili paste, optional (for heat)

1 green onion, thinly sliced

INSTRUCTIONS
- Cook the popcorn chicken per the package directions.
- While the chicken cooks prepare the sauce: In a medium size bowl add the chicken stock, brown sugar, soy sauce, hoisin sauce, rice wine vinegar, cornstarch, and sesame oil and whisk to combine. Keep whisking until there are no clumps of cornstarch visible. Set aside.
- Once the chicken is finished cooking set the chicken aside and finish making the sauce. In a large skillet placed over medium-high heat add the oil to the pan. Once the oil is hot and shimmery add the garlic, ginger, and chili paste and cook it, stirring constantly for 30 seconds.
- Quickly pour in the sauce that you made earlier and let it simmer for 2-3 minutes, stirring frequently until it slightly thickens.
- Add the cooked popcorn chicken into the skillet and toss the pieces in the sauce until well coated.
- Serve immediately with a serving of cooked white or fried rice. Garnish with sliced green onions and sesame seeds.
NOTES
To make this recipe healthier: use with fresh chicken breasts. Dice the chicken into pieces and cook in a skillet until cooked through. Remove the chicken from the pan and proceed with the recipe as instructed.
